Nicely done, sir! Have you tried smoking without brining the shoulder for 18 hours (or any length of time) and noticed a difference in final product tenderness, flavor, etc.? I've never tried brining shoulder myself (usually just use dry rub) so I'm very curious.Yes, my BBQ is called an offset smoker. (This one in my old smoker by the way). Our rubs are usually a mixture of salt, sugar, pepper, chili powder, garlic powder, paprika, and a little cayenne. I'm sure there are many plans for offset smokers on the net, or look into "UDS Smokers" for a less expensive alternative.
I have been smoking 4 case of butts a week for years for my food truck and I learned that rub does not penetrate the fat cap. your wasting your rub.

Looks amazing, I wondering if you have encountered any bitterness from burning just wood? I did a smoke a couple weeks ago and used a lot bigger chunks of apple wood and I could taste a slight bitterness on the meat. I suppose my real question is how do you allow the wood to burn without producing a lot of white smoke?

It still boils down to managing the fire. When I add wood, I let it go to flame before closing the door. Bitterness is caused by creosote from smoldering wood. It needs to be just past smoldering, closer to burning.
Quick question, I did exactly what you said. Got the heat to around 225 to 250 degrees and the meat was also around 8.5 lbs. 14 hours later and the meat only got to 161, so it more like sliced pork instead of pulled pork. Do you have any other tips? Thank you.
A simple question from a novice, could some one please help me and answer this question. By applying the dry rub, prior to the marinade or soaking, Does it affect the Application of the Dry Rub.

In this video I applied the rub and bagged it with a little vinegar and apple juice, which turned it into a kind of marinade. However, prior to putting it on the pit, I applied more dry rub, since the original rub gets pretty broken down overnight. You can simply apply rub a couple of hours prior to cooking, instead of letting it sit bagged overnight if you wish.
Real BBQ is just a very slow process. Basically you're using low heat to break down the tough connective tissues in meat. This can't be done on high heat.This is an old school video. I use it in my ceramic smoker with hardwood :) Also, when letting the shoulder rest I wrap it in foil, then a towel, and then toss it in a cooler for about an hour. It really helps finish breaking down the remaining connective tissue and fat. Toss a splash of apple juice and apple cider before wrappin it up. It'll pull in all that moisture while it rests. This was my very first video and since then, I have purchased a "Stoker" that monitors the temp and ads air as needed. I've since started using a mix of 100% natural charcoal and hardwood. That being said, when I temp starts to fall I would open the damper more. If it continues to fall, you probably need more wood or charcoal. I also use "The Minion Method" for managing my charcoal. Gives me several hours of burn time. Google it if you don't know what it is. Great stuff.

That looks delicious! I use a Costco boneless pork shoulder cooked in a CookShack elecrtric smoker oven using apple wood chunks. Soaking the pork in apple juice and onions for at least 24 hours before smoking adds complexity to the final flavors. Then I mix the pulled pork with my BBQ Sauce for Amateurs and voila! the best pulled pork sandwich in Silicon Valley. Thanks for a great video!

I have my wood delivered to my house buy a guy that sells wood to restaurants. If you have a BBQ Galore nearby (or other BBQ stores) they sell wood. Other than that, look in the phone book and check on places that sell firewood. Ask if they also carry cooking wood. I've actually seen people with apple and pecan trees and asked them if I could cut a few branches. Hope this helps a little bit.why let it sit for 30min.? That part about the Temp plateau makes a lot of sense. The temp goes up quick as the meat is warming, but when it reaches a certain temp the energy starts going into breaking down the bonds of certain tissues instead of going into the meat itself. Did you figure this out your self?

why not make your own rub? Using one out of a jar is a cop out and not true BBQ. Even if it is Myron Mixons.
That is a ridiculous statement. There is no such thing as a special secret rub and the base of every single one is salt and pepper. Find a rub you like and add the ingredients you like that are missing.No the base of most rubs is salt and brown sugar. Pepper?? ROFL. No such thing as a special secret rub?? Every true BBQ king has their own special secret rub. Why buy a store bought rub when making your own is so simple? That is a sin.

Maybe you should harvest your own herbs and spices for your rub also.BBQ is a way of cooking, so someone using their own rub or not does change it is BBQ. If you make your own then by all means use it. I make my own but if he likes this it is OK with me.
its all preferance - there is a little heat in that rub and most of my family does not like heat - so we dont like to over due it..
Wait, what? "The New Your butchers, over in Atlanta, Georgia." Someone failed geography forever. :) But a nice demo for someone who's never made a Boston butt. Makes for excellent pulled pork. One thing I'd suggest: make your own rub. That way you're not adding a bunch of spices to a commercial rub, you've got everything blended to taste in your own rub. It's simple, easy, and makes the results more your own. Also, coat the butt in a cheap yellow mustard to help the rub adhere.yes its the NY Butcher in Atl - great meats! the brown sugar acts like the mustard--- my wife hates mustard with a passion and even though you could NEVER ever taste it she "knows" its there and does not like it. so next best thing -- the brown sugar.
What you can do is cross-hatch the fat cap as well. You got a big Butt there. I get 18 - 20 pound full shoulders with the Picnic attached. I do 2 in my WSM at a time, up to 24 hours smoke time.

Here's a hint to not contaminate your seasonings. Put a glove on them. That way your not putting away a seasoning that you have handled after touching raw meat.

Why just not wash your hands? clean hands cannot be any dirtier than clean gloves right? I´m always skeptical about chefs who donut touch their food.
I still wash my hands after i take the gloves off. The real reason i use the gloves is becase the rub tends to stain your fingers and nails. Then wen you have people over and are eating people look at your hands and see red figner tips and they think you didnt wash your hands... it goes away after about 24 horus - but the gloves solve this issue!!

I never brine them! I find that it makes it very hard to form a nice bark on the outside. an injection is not a bad idea. I do put a water pan in the smoker which "steams" the meat as it smokes which puts a ton of moisture in the meat!!! good luck!

Trying my first pork shoulder but in my grill. the grill is charcoal and quite big and keeping temp.Hoping for the best.
When buying a pork shoulder make sure to ask the butcher to cut the gland out. If you go to the butcher shop ask the butcher to bone the shoulder out,cut the gland out and tie the bone back on and you still get the full flavor of the bone(no homo). without dealing with it.I smoke about 10-15 shoulders a year and I have never heard of the gland in it Where is it located ? For me charcoal is the way to go... propane is sooo much easier to use, much less clean up less monitoring. you will get a little less smoke from propane. my money is on a good charcoal smoker!

Butt Rub is GREAT stuff. I use it a lot for different things. It's also awesome to sprinkle on sauteed mushrooms. I have my first smoked butt going as we speak...Great video! Thanks for posting.
